When we talk about safe and standardized food, hygiene level is the first thing that comes to our mind, to maintain a standard of the business, Food Business Operator shall keep a basic level of hygiene and to ensure that Food Businesses are maintaining proper level of hygiene while processing their food in accordance with Food Safety and Standard Authority of India.


About the scheme


The scheme was initiated by the food authority in 2019 for food service establishments, the ratings given under the scheme is based on compliance with Food Hygiene and Safety requirements that are laid under part V of Schedule 4 of Food Safety and Standards( Licensing and Registration of Food Businesses) Amendment Regulation, 2018 for food service establishments. It is an initiative for encouragement food businesses to practice self-compliance and gain confidence of the consumer by providing safest food possible.
Food Safety and Standard Authority of India has recognized 29 Hygiene Rating Audit Agencies till date to ensure uniform Hygiene Rating Verification Process. Higher the rating higher is the compliance with schedule 4 by the food service establishments.


How to enroll under the scheme



steps to enroll under the scheme are as follows:


Step- 1 FBO Logins with FLRS Login ID & Password


Step-2 self assessment of food safety compliance



Step-3 Generate and display hygiene ratings


Step-4 inspection and validation by FSO and HRAA



FBO- Food Business Operator, FLRS- Food Licensing & Registration System


FSO- Food Safety Officer, HRAA- Hygiene Rating Auditing Agency


Mandatory Requirements that must be followed:


1. Food Business Operator must have FSSAI License/ Registration and follow compliances under schedule 4 of the Food Safety and Standard Act. Also, adequate measures shall be adopted to ensure that food served to the consumers is of safe and standardized.



2. FBO must train all food handlers and appoint a certified Food Safety Supervisors.



3. Must have Food Safety Display Boards prominently displayed in the premises



4. food samples shall be tested periodically.
