FoSTaC



FSSAI's Food Safety Training and Certification (FOSTAC) program provides food safety training to target groups in the food industry in order to increase knowledge and awareness of food safety legislation and policies in order to ensure food safety and cleanliness.


The training division of the FSSAI has scheduled training of trainers (tot) for numerous FoSTaC courses. Visit the quarterly training calendar (October to December 2021) under the notifications page for further information.


To ensure consistency in course fees charged by training partners, the FSSAI has previously published an office memorandum on FSSAI prescribed costs for fostac courses, dated June 23, 2021. All FoSTaC stakeholders have been told that a review of the prescribed fee structure will be conducted in consultation with all stakeholders every 6-8 months.



FoSTaC offers a variety of competency-based (Food Safety Supervisor) certification program as well as one Covid19 Guidelines for Food Industry Awareness training.


FSS classes last 4 to 12 hours and are spread out over 1 to 2 days, while the awareness course lasts 2 hours. Domain specialists created the courses, which were then vetted by the FSSAI's expert committee.


The training materials for each session are based on the General Hygiene and Sanitary Requirements as well as Good Manufacturing Practices outlined in Schedule 4 of the FSS (Licensing and Registration of Food Businesses) Regulation, 2011. The courses are grouped into the three levels below.



BASIC


Basic level accreditation is intended for small-scale food businesses. Each basic lesson lasts for four hours. Street Food Vending, Catering, Manufacturing, Storage & Transport, and Retail & Distribution are among the courses offered.


ADVANCE


Advanced courses and certification are only available to State and Centrally Licensed food establishments. Duration of Each course is eight hours long. Catering, Manufacturing/Processing, Storage & Transport, and Retail & Distribution are the courses offered.


SPECIAL


For high-risk food businesses or businesses that require special attention, specialized courses have been designed. Duration of the particular course lasts between 8 and 12 hours. Spread it out over a few of days. Milk and Milk Products, Animal Meat and Meat Products, Poultry Meat and Meat Products, Fish & Fish Products, Packaged Water & Water Based Beverages, Bakery (Level 1), Bakery (Level 2), Edible Oil and Fat, Health Supplements & Nutraceuticals are among the topics covered in this course.
